摘要
为获得口感良好富含高活性膳食纤维的乳制品,采用化学法对膳食纤维进行处理,获得可溶性麦麸膳食纤维,并将其应用于酸奶和鲜奶制品中。结果发现:添加6%麦麸可溶性膳食纤维、0.3%低聚木糖及6%白砂糖时,麦麸可溶性膳食纤维保健型酸奶的品质最佳;添加5%麦麸可溶性膳食纤维、0.1%低聚木糖及5%白砂糖时,麦麸可溶性膳食纤维保健型鲜奶品质最佳。
Wheat bran is full of dietary fibre,but it has not yet been fully used.In this study,DF was treated by chemical processing method to obtain soluble wheat bran dietary fiber,and applied it in yogurt and milk products.The results showed that quality of health-based yogurt of wheat bran soluble dietary fiber was best by adding soluble wheat bran dietary fiber 6%,Xylooligosaccharide 0.3% and white sugar 6%.Quality of the wheat bran soluble dietary fiber health-based milk was best by adding wheat bran soluble dietary fiber 5%,Xylooligosaccharide 0.1% and white sugar 5%.
