摘要
选用PA/PE复合膜包装大米,采用单因素试验方法,研究在不同体积比例的CO2和N2混合保鲜气体作用下,大米在贮藏期间的含水量、脂肪酸含量、还原糖含量、粘度的变化。结果表明:体积配比为60%CO2+40%N2的混合气体对大米的保鲜效果最好。
The authors chose the PA/PE complex film to pack the rice,adopted single factor experiment method to study the changes in rice moisture,fatty acid,reductive sugar,and viscosity during storage under the effect by different volume ratio of mixed fresh-keeping atmosphere of CO2 and N2.The results show that the fresh-keeping effect of rice in the mixed atmosphere of 60%CO2＋40%N2 is the best.
