摘要
[目的]探索柿果软化过程中果胶含量和细胞膜相对透性的变化规律。[方法]以我国主栽涩柿品种磨盘柿为试验材料,研究磨盘柿采后贮藏过程中果胶含量和细胞膜相对透性与果肉硬度变化间的关系。[结果]随着柿果硬度的降低,水溶性果胶含量呈上升趋势,原果胶含量呈下降趋势,细胞膜相对透性呈逐渐上升趋势,并且柿果硬度与原果胶含量之间存在正相关关系,与水溶性果胶和细胞膜相对透性之间存在负相关关系。[结论]果胶含量和细胞膜相对透性的变化是导致柿果实软化的主要原因。
[Objective] The purpose was to investigate the change laws of pectic substances content and the membrane permeability during softening of persimmon fruit.[Method] Taking astringent persimmon fruit variety "MOPAN" mainly planted in China as research materials,the correlations between the fruit hardness and pectic substances contents and the membrance permeability were studied in the storage process after harvesting.[Result] As persimmon fruit hardness reduced,the protopectin content decreased,the soluble pectin content increased,cell membrane permeability increased.There were negative correlations between the soluble pectin content,the membrane permeability and the fruit firmness.[Conclusion]There was a positive correlation between the protopectin content,the membrane permeability and the fruit firmness.Changes of pectic substances contents and cell membrane relative permeability played an important role in persimmon fruit softening.
