榆林市街头食品卫生状况调查分析及对策 被引量:1

摘要 目的通过对街头食品卫生状况的调查,了解榆林市街头食品卫生状况,为制定街头食品卫生监督管理办法提供科学依据。方法在全市每个县(区)随机抽取20个街头食品摊住,对其卫生状况进行现场调查。结果 35%的街头食品摊贩在经营过程中存在严重的"脏、乱、差"问题,27.5%的食品摊贩无证经营、人员持证上岗率不足40%,85%的摊位餐具不消毒,70%的摊位"三防"设施不完善,从业人员卫生知识知晓率低者占调查总数的36.3%,且均未接受过卫生知识培训。结论街头食品因缺乏规范和有效的管理而存在严重的卫生问题,各部门应联手对其进行综合治理,严格审批制度,加强卫生监督,强化卫生执法力度,为广大消费者提供安全、放心的就餐场所。 Objective By surveyed hygienic Status of street Food to draw the scientific proof for lay down administration and Supervision regulations of hygienic Status of street Food. Method 20 food stands which were picked out randomly were surveyed their hygienic Status in every county. Results 35% street peddlers of food had very serious problems on dirty,disorderly and bad.27.5% street peddlers of food did not have business licences.40% employees did not have work licenses.85% street peddlers of food did not sterilize their tablewares.70% food stands did not have the perfect facility which were used to defend the gnat ,rat and dust. 36.3% employees did not master the fundamental Knowledge of hygienic food and did not access to training on Hygiene food. Conclusions For absence standard and effective Management on street Food ,so there are very serious hygienic problem on it. In order to offer Security and rest assured Food environment,our every department must have comprehensive control,have the strict approval system,have the forcefully hygienic administrative enforcement.
