摘要
本文对美洲鲥鱼的肌肉营养成分进行了测定分析,结果表明:鱼肉粗蛋白质、粗脂肪含量分别为20.58%和3.68%,18种氨基酸总量为13.33%,其中8种必需氨基酸、4种鲜味氨基酸的含量分别为5.33%和5.15%,必需氨基酸含量占氨基酸总量的39.98%,4种鲜味氨基酸的含量占氨基酸总量的38.63%,低于鸡蛋蛋白质模式。脂肪酸含量丰富,尤其是不饱和脂肪酸含量达到0.23%。无机物含量,特别是Mg、Fe、Zn等微量元素含量也比较丰富。
The major nutrition composition of the muscle of culture American shad was analyzed.The results were as foUowing:there were 20.58 % crude protein,3.68 % lipid,13.33 % amino acids consisted 18 kinds of amino acids.Four delicious amino acids aspartic acid,glutamic acid,glycine,alanine,with a content of 5.15 % ,accounted for 38.63 % of to- tal amino acid content,while the content of eight essential amino acid accounting for 39.98 % in total amino acids for hu- man being was 5.33 % in whole muscle.The constitutional rate of the essential amino acids accorded with the WHO/FAO standard.The fatty acids content was abound, DHA content attained 0.23 %.Inorganic, especially Mg,Fe,Zn on accessory element were abundant.
