本文简要介绍了食品工业中食品微胶囊化的壁材、方法及作用,并阐述了微胶囊技术在食品工业中的应用及前景。
This article summarized the basic principles, function, methods and material of mircroencapsulation in food industry. And the applications and prospect of this technology in the food industry were introduced.
