摘要
采用常用的物理和化学方法对金针菇进行贮藏保鲜的试验研究,结果表明,低温可以延长金针菇的贮藏保鲜时间,随着温度降低,金针菇的贮藏保鲜时间呈指数曲线增加.贮藏温度为0℃时,金针菇的贮藏时间可以延长到31d.贮藏温度为5℃时,PE包装的金针菇贮藏8d,其失水率、细胞质膜透性、褐变程度3种指标的变化很小.化学试剂对金针菇的PPO活性、POD活性、CAT活性及褐变程度均有极显著的抑制作用.5℃贮藏15d后焦亚硫酸钠处理的金针菇PPO活性比对照降低了49.4%;CaCl2可使POD活性比对照降低了58.3%;4-己基间苯二酚可使CAT活性比对照降低了53.8%.
Storage and preservation study of Flammulina velutipes is carried out with commonly used physical and chemical methods, the results show that low temperature can prolong the time of storage and preservation of Flammulina velutipes,as the temperature decreases,the storage and preservation time of Flammulina velutipes increases with exponential curve . When the storage temperature is 0 ℃, the time of Flammulina velutipes storage can be extended to 31 d. When the storage temperature is 5 ℃, Flammulina velutipes can storage 8 d with PE packaged,the indicator of the degree of water loss rate, cell membrane permeability and browning change very little. The inhibition of chemical reagents on PPO activity, POD activity, CAT activity and browning of Flammulina velutipes is significant. After 15 d with 5 ℃ storage, the PPO activity of Flammulina velutipes which is treated with sodium metabisulfite is 49.4 % decreased compared with the control group. CaCl2 can decrease the POD activity by 58.3 % compared with the control. 4-hexyl resorcinol can decrease CAT activity by 53.8 % compared with the control.
