7S和11S大豆球蛋白酶解物抗氧化性的研究 被引量:3

Studies on Antioxidation Activity of Hydrolysates from Soybean 7S and 11S Globulin Proteins

摘要 分别以7S和11S大豆球蛋白为底物,以抗氧化性和水解度为指标,从5种蛋白酶中筛选出碱性内切蛋白酶为最佳水解酶,利用正交试验优化了其最佳水解条件。结果表明碱性内切蛋白酶水解7S和11S大豆球蛋白的最佳条件为温度55℃,pH值8.0,酶用量5%,底物质量浓度4%。 In this research, the substrates were 7S and 11S globulin proteins. Alcalase was selected from the five proteinases, which was the best one to hydrolyze 7S and 11S globulin proteins under the target of antioxidation activity and the degree of hydrolysis and the best condition of Alcalase hydrolyze 7S and 11S globulin proteins was optimized. Then the antioxidative activity of 7S and l lS globulin were determined by the inhibite autooxidation of grease. The results showed that the optimal hydrolytic conditions of 7S and llS globulin were: hydrolysis temperature 55℃, pH value 8.0, dosage of protease 5%, substrate qualitv concentration 4%
