摘要
壳聚糖酶是一种催化壳聚糖降解为壳寡糖的糖苷水解酶。基于近年来国内外壳聚糖酶的研究成果,本文概述了壳聚糖酶的微生物来源、理化性质、分子特征及研究现状,并对今后的发展趋势进行展望。
Chitosanase,a glycoside hydrolase,catalyzes the hydrolysis of chitosan to chitosanoligosaccharides.Current research progress of chitosanase at home and abroad including microbial origins,physicochemical properties,molecular charac-teristics and development status quo are discussed in this paper.The future development trend of chitosanase is also proposed.
