摘要
乳链菌肽是一种高效、无毒副作用的天然生物防腐剂,其抑菌谱较窄,仅对革兰阳性菌起作用,但经过冷冻、加热、低pH值处理或与其他生物和化学防腐剂混合使用,可扩大抑菌谱,增强抑菌效果。现对近年国内外乳链菌肽复配应用的研究进展作一综述。
Nisin is a high-efficient and non-poisonous natural bio-preservative. The antimicrobial spectrum of nisin is narrow, which is only against gram-positive bacteria. But various treatments, such as freezing, heating, low-pH or mixing with other chemicals and biological preservatives, can expand the antimicrobial spectrum ofnisin and enhance the inhibitory effect. This paper reviews the recent research on the application of compound nisin at home and abroad.
