摘要
以蛋氨酸和硫酸铜为原料合成蛋氨酸铜,最佳条件为配体摩尔比2∶1,每50mL的6%蛋氨酸溶液中加入3.25mL的30% NaOH,产品螯合率为90.32%。从产物组成及红外光谱分析可知,其化学组成为Cu(Met)2。油脂氧化试验表明,合成的蛋氨酸铜有很好的油脂抗氧化作用,可以用于脂肪含量较高的婴幼儿配方奶粉。
Methionine chelated copper was synthesized from CuSO4 and methionine. The optimum conditions were as follows: molar ratio of ligand to metal of 2 :1, 3.25 mL 30 % NaOH per 50 mL 6% methionine solution. The chelation ratio of product is 90.32%. Methionine chelated copper was identified as Cu(Met)2 by component analysis and IR spectroscopic analysis. Antioxidation experiment showed that methionine chelated copper exhibits good antioxidation effect on lipids and is suitable for fortification of infant milk formulation.
