Dietary fiber was prepared from sugar beet pulp pre treated by water, 1.5% citric acid as well as 95% alcohol, and its physical and chemical properties were determined and compared. An economical and practical method for dietary fiber preparation has been established. This study not only opened up a new way for the comprehensive utilization of sugar beet pulp, but also provided a new source for dietary fiber production.
