摘要 卡拉胶是一种重要的食用胶,具有良好的理化性与流变学性能,可作为食品工业中的增稠剂、胶凝剂、悬浮剂、浮化剂和稳定剂等,并在果冻、软糖、冰激凌、肉制品、啤酒等食品工业中发挥着重要的作用。
