摘要
                
                    以豆腐为代表的传统豆制品一直存在着品质不稳定的问题,豆制品品质稳定的关键在于豆浆浓度与凝固剂的匹配,要获得质量稳定的产品需要在加工过程中实现对豆浆浓度在线检测和控制。本文研究了豆浆浓度与密度的关系,结果表明豆浆浓度与其密度之间存在着很好的相关性(R>0.989)。依据伯努力方程,设计了利用差压原理在线检测豆浆密度的装置,并初步设计了在线控制豆腐胶凝过程中豆浆中可溶性固形物含量的系统。
                
                Instability in quality has always perplexed the traditional bean products industry which is represented by tofu, the key to keep the quality stable is the match between coagulant and concentration of soymilk, therefore, it is necessary to achieve on-line detection and control over the concentration of soymilk in the processing. The relationship between the concentration of soymilk and density had been researched in this paper, and the result showed that there was a very good correlation between them. Based on the Bernoulli equation, we designed on-line detector based on the principle of differential press to detect the density of soymilk and briefly designed the on-line control system to control the soluble solids content of soymilk in gelation process of tofu.
