摘要
以宁海紫甘薯粉为原料,研究了紫甘薯色素微波提取的工艺。通过正交实验确定最佳提取工艺参数组合,结果表明最优工艺参数为微波功率700W,微波时间5min,液固比为22.5:1,pH为2.5。在此条件下,测得紫甘薯中花色苷的含量最高为236.3mg/100g。
Using purple sweet potato powder as material, extraction technology of purple sweet potato pigment by microwave method was studied in this paper. The best parameters of technology were determined through orthogonal test.The optimum condition of extraction was obtained as follows:adding 22.5 times water as much as purple sweet potato in 700W and pH 2.5 for 5minutes.Pigment extraction in the purple sweet potato ratio was up to 236.3mg/100g.
