油溶性茶多酚硒对油品的抗氧化性能研究

摘要 目的研究油溶性茶多酚硒(oil-soluble tea polyphenol selenium also known as lipid-soluble tea polyphenols selenium,LTP-Se)在常温25℃和100℃不同温度条件下对蓖麻油、茶籽油、猪油的抗氧化作用。方法在常温25℃和100℃不同温度条件下,以LTP-Se作为抗氧化剂,采用空气自然氧化法考查对蓖麻油、茶籽油、猪油的抗氧化作用。结果添加LTP-Se浓度为80mg/kg时,表现出对蓖麻油、猪油、荼籽油抗氧化效果最佳。前期(1~2d)过氧化值(peroxide value,PCV)的测定结果为:BHT〈LTP〈LTP-Se;后期(3~4d)POV:LTP-Se〈LTP〈BHT,柠檬酸(CA)、抗坏血酸(AA)对LTP-Se抗油脂氧化有增效作用。结论LTP-Se对油品具有较好的持久抗氧化效果。 Aim To investigate the effect of the oil-soluble tea polyphenol selenium also known as lipid- soluble tea polyphenols selenium (LTP-Se) on the antioxidation activity for castor oil, lard and tea seed oil under the condition of oxidation at 25 ℃ and 100 ℃. Methods The antioxidation effect of LTP-Se, acting as an antioxidant, on castor oil, lard and tea seed oil was analyzed which was tested at 25 ℃ and 100 ℃ with natural air oxidation method. Results The antioxidation of LTP-Se achieved the optimal effect at a concentration of 80 mg/kg. The determination results of the peroxide value over previous period (142 days) were as follows: LTP-Se〈LTP〈BHT; the subsequent (3-4 days) POV: LTP-Se〈LTP〈BHT. Citric acid and ascorbic acid had synergetic action on the anti-oxidative activity of LTP-Se. Conclusion LTP-Se has good lasting oxidation resistance effect to oils and fats.
