摘要
古代称酒是百药之长,与人们的健康、长寿息息相关。人们将饮酒量失控造成的恶果归罪于白酒。科学调查研究表明,经常适量饮白酒的人身体健康、长寿。对贵州迎宾酒(酱香型酒)的研究发现,其中许多美拉德反应产物有保健功能。
Wine was regarded as the head of medicine in ancient times and it was closely related to people's health and life-span. However, people often confused overdrinking with the functions of liquor. Scientific research indicated that moderate drinking was helpful for peoples' health. Besides, the study of the compositions of Guizhou Yingbin liquor (Maotai-flavor liquor) revealed that lots of Maillard reaction products in the liquor had healthcare functions. (Tran. by YUE Yang)
