摘要
合肥市近郊菜园生产的13种蔬菜中,矿质营养元素含量水平是Ca>Mg>Fe>Zn>Mn>Cu。营养元素含量变动范围大致为:Ca、Mg1.0~10.0g·kg-1,Fe70~250μg.g-1,Mn15~180μg·g-1,Zn30~120μg·g-1,Cu10~30μg·g-1。矿质营养元素含量丰富的蔬菜有苋菜、蕹菜、芹菜、菠菜等。叶茎类蔬菜矿质元素含量高于果菜类蔬菜,不同蔬菜的含量差异达5~7倍甚至20倍以上,而同种蔬菜不同样品之间含量差异多在1倍以内。
Thirteen kinds of vegetables (contained 117 samples) around Hefei city were investigated.The concentration of mineral nutrients in the vegetables showed Ca>Mg>Fe>Zn>Mn>Cu,which were 1 6~10 0 g kg -1 for Ca and Mg,70~250 μg·g -1 for Fe,15~180 μg·g -1 for Mn,30~120 μg·g -1 for Zn and 10~30 μg·g -1 for Cu.The content of leaf and stem vegetable species is higher than that of fruit vegetable species.The mineral concentration varied greatly (5~7 times) among different vegetable species while had little change between individule plant of the same species.
