摘要
食品真伪检测鉴别技术已成为食品安全领域的关注热点之一。本文分析了我国鉴伪的重要性和艰巨性,阐述了食品鉴伪的概念及重点工作,提出了建立现代食品分子检测鉴别技术体系的研究思路。
Authentication of food products has become one of the hotspots in food safety with the development of economy. The importance of adulterate food detection was analyzed, the conception and critical works of food authenticity was expatiated; and the suggestion to establish advanced food authenticity detection system was proposed.
