摘要
海参具有很高的营养价值和经济价值,其中以刺参的品质最佳。本文主要以刺参为例,对海参蛋白酶、淀粉酶、脂肪酶、褐藻酸酶和纤维素酶的活性及分布进行总结,并对消化酶活力的影响因素进行阐述。
Sea cucumber is a kind of high tonic value seafood,and Apostichopus japonicus with the highest meat quality.The activities and locations of protease, amylase,lipase, alginic acid enzyme and cellulase were summarized and influencing factors were reviewed in this paper.
