摘要
综述了鲜枣成熟衰老过程中保护酶活性的变化及其意义,为研究鲜枣成熟衰老机理及制定科学合理的保鲜措施提供依据。
The changes and functions of enzymatic protection during ripening and senescence in jujube fruit were reviewed Based on these reviews, the mechanism of ripening and senescence in jujube fruit could be understood.
