摘要
该文综述水产类食品主要卫生学问题。细菌污染仍然是水产品的主要卫生学问题,副溶性血性弧菌是最常见的致病菌;生食海鲜所致的食源性寄生虫病近年来在城市的发生率有增高趋势,与水产品有关的食源性寄生虫病主要有华支睾吸虫病、卫氏并殖吸虫病、广州管圆线虫病;环境污染特别是海洋污染造成的贝类毒素中毒事件也时有发生;由于人为添加保鲜剂、抗生素所导致的水产品药物残留不容忽视;组胺中毒、鱼胆鱼卵中毒及虾蟹致敏原引起食源性疾病也值得关注。
This paper summarizes the major hygienic problems in aquatic products. The bacterial contamination is still the major problem in aquatic products and Vibrio parahaemolyticus is the most common pathogen. The incidence of food borne parasite diseases such as clonorchiasis sinensis, paragonimiasis and angiostronglus cantonensis has an increasing tendency. The poisonings caused by environmental pollution especially paralytical shellfish toxin happened constantly. In addition, the food borne diseases caused by histamine poisoning, fish gall bladder and ovary toxin and the allergic agent in shrimps and crabs should be taken into consideration.
