摘要
探讨了麦角甾醇作为评价粮食质量安全指标的可行性。对可以放心食用的这部分粮食进行了麦角甾醇含量调查分析;对真菌侵染程度差异较大的粮食进行了真菌毒素、带菌量与麦角甾醇相关性的分析,探讨了麦角甾醇在评价粮食质量安全方面的作用。
The feasibility of ergosterol as an index to estimate grain safety degree was discussed in this thesis. To grain which can be used with reassurance,the ergosterol content was investigated;To grain which has different molds invasion, the relativity between ergosterol content and mycotoxins, and molds count was tested, the function of ergosterol in estimation of grain quality was discussed.
