地沟油的污染及变质情况研究 被引量:48

摘要 研究了地沟油的污染及变质情况。检测了地沟油的酸价、碘价、过氧化值、折光指数、熔点五项指标,结果远远偏离正常食用油范围;采用电感耦合等离子体质谱(ICP-MS)检测地沟油中15种微量元素,发现Fe、Pb、Cr、Zn、Mn在地沟油中含量明显超出食用油;采用气相色谱质谱联用(GC-MS)方法测定地沟油的挥发性物质(≤80℃),共鉴定了44种化合物,占总组分的99.46%,其中相对含量最高的是油脂水解氧化产物D-甘油酸,此物质在食用油中未被检出。 The pollution and deterioration of hogwash oil was lucubrated .Acid number, iodine value, peroxide value, refractive index and melting point of hogwash oil were detected, and the results were far from the range of normal edible oilss, Contents of trace dements in hogwash oil were determined with microwave digestion and inductively coupled plasma mass spectrometry, and the contents of Fe, Pb, Cr, Zn, Mn in the hogwash oil were much higher than those in the edible oilss; The volatile substances of hogwash oil(≤ 80℃) were analyzed by GC-MS and 44 kinds of components were identified which accounted to 99.46%, to the maximal relative amount component was d-(+)-Glyceralic acid which was hydrolytic and oxidative product of hogwash oil and could not be found in the edible oils.
