摘要
根据可溶性糖易溶于C2H5OH水溶液、淀粉不溶于C2H5OH水溶液在稀HCl中能转化为可溶性糖、可溶性糖在稀HCl中可全部转化为还原糖、还原糖在碱性溶液中能将K3Fe(CN)6还原为K4Fe(CN)6的原理,采用全量测总糖、去可溶性糖样品测淀粉的方法,研究出了一次快速而准确地测定栗实可溶性糖及淀粉含量的方法。
Soluble sugar dissolves in C2H5OH and water, and amylum doesn't, but it can be hydrolyzed in the diluted solution of HCl into reducing sugar. And reducing sugar can reduce K3Fe(CN)6 into K4Fe(CN)6. On the basis of these principles, a fast and exact method for joint determiniation of soluble sugar and amylum has been worked out for Chinese chestnut seeds. The total sugar is determined with the original sample hydrolyzed, and the amylum content is determined with the sample with the soluble sugar removed.
