摘要
以甘薯淀粉为原料制备抗性淀粉,用正交实验确定压热处理制备抗性淀粉的最佳制备工艺。结果表明,甘薯抗性淀粉制备的最佳条件为:淀粉糊的浓度35%、pH值4.5、糊化温度115℃、糊化时间70min、老化时间72h。
Resistant starch was produced from sweet potato starch. Through orthogonal experiments, the optimum conditions of the autoclaving treatment for preparing the resistant starch were studied. The obtained optimum conditions are starch content 35%, pH value 4.5, gelatinization temperature 115℃, gelatinization time 70 min, and refrigerate time 72h.
