几种传统食品中黄曲霉毒素B_1的检测与安全评价 被引量:13

Determination of aflatoxin B_1 and safety evaluation of some traditional foods

摘要 采用酶联免疫法检测月饼、花生油、花生糖和豌豆酱等传统食品中的黄曲霉毒素B1(简称AFTB1)含量,分析AFTB1超标的原因及其安全性,结果表明:大部分传统食品中AFTB1在安全限量之内,少数几类产品存在安全隐患。 Aflatoxin B1 ( AFT B1 ) in some typical traditional foods, such as moon cake, Peanut oil, peanut sugar and pea sauce, were determined using enzyme-linked immunosorbent assay (ELISA) . In addition, the reasons that Aflatoxin B1 in foods was higher than the Maximum residue limits of national standard were also discussed. By evaluating the safety of the above-mentioned foods, it was concluded that most of the traditional foods were safe, but some of them were unsafe.
