血红素铁是一种生物态铁,可直接被肠粘膜细胞吸收,不产生任何消化道刺激症状,生物利用率高,是理想补铁剂。该文综述血红素铁结构与性质、功能、提取、测定方法和在食品工业中应用情况。
As a kind of biology iron, heme iron can be absorbed by the cells of the mucons membrane of the intestina directly, not producing any stimulating symptom to the digest tract. Heme iron is an ideal iron supplement and its absorptivity is high. The structure and nature, function, extraction, determination and application in the food industry ofheme iron are summarized in this article.
