摘要
先用氢氧化钠处理辣椒皮,考察不同浓度的氢氧化钠溶液对提取红色素的影响;然后采用不同溶剂提取红色素。对比试验结果表明:用浓度8%的氢氧化钠溶液除辣,乙酸乙酯溶剂提取,可以得到高产率、高色值、无异味的辣椒红色素。
Sodium hydroxide was used to eliminate the piquancy before extracting paprika pigment by organic solvents. Effect of sodium hydroxide concentrations on paprika pigment extraction was studied. Comparative experiments of different solvents showed that the optimum condition of extracting the paprika pigment was 8 % sodium hydroxide and ethyl acetate solvent, which was a widely used method at present and had high yield, high coloring value and non-smell paprika pigment.
