Sequences and functions of bioactive peptides derived from whey protein

摘要 乳清蛋白经酶解产生的肽类除了具有极高的营养价值之外,而且还具有一定的潜在生物活性。目前发现的乳清蛋白源生物活性肽主要有阿片肽、抗高血压肽、抗菌肽和免疫调节肽。综述了上述4种肽的氨基酸序列及其主要功能;对酶解过程中应注意的因素,如酶的类型、水解度、预处理方式、酶的灭活方式、底物纯度和水解过程等理化参数进行了归纳总结。 Whey-derived peptides by enzymatic hydrolysis have high nutritional value and many biological functions. The bioactive peptides derived fi'om whey protein consist mairfly ofopioid, antihypertensive, antibacterial and immunological peptides. This paper presents the amino acid sequence and properties of these bioactive peptides isolated recently from whey proteins. It particularly covered the key parameters used to enzymatically hydrolyze whey proteins in practice. Theses factors affecting the release of bioactive peptides might include specific-enzymes used for the proteolysis of whey protein, the degree of hydrolysis, the pretreatment of protein substrate, the technique used for enzyme inacti- vation, the purity of the protein substrates, and the physicochemical conditions.
