摘要
随着人们对食品安全性与环境友好性的日益关注,天然多糖涂膜保鲜成为果蔬保鲜领域的研究热点之一。介绍了天然多糖涂膜保鲜的原理以及在涂膜保鲜领域应用较为广泛的天然多糖,并对其研究现状、存在问题进行了综述。
The application of natural polysaccharides coating for preserving fresh fruits and vegetables have attracted much attention, as the concem to the security of food. It is briefly summarized in this article that some polysaccharides applicated in preserving fruits and vegetables, which include starch, chitosan, cellulose, konjac glucomannan etc. It can supply references to the research and application of the natural polysaccharides coating for preservation.
