摘要
测定苦瓜中蛋白质、氨基醚及２０种无机元素的含量。结果表明，蛋白质含量为１４．８９％；人体必需氨基酸８种；人体必需微量元素中的Ｃｕ，Ｚｎ，Ｇｒ，Ｃｏ，Ｎｉ，Ｍｎ，Ｌｉ等含量较高。这为评价苦瓜的品质并更好地开发利用苦瓜提供了实验依据。
rotein,sixteen amino acids and twenty inorganic elements in Momordica charantia were de-termined.Protein accounted for 14.89%。Eight essential amino acids were found,but the amino acid scores were not ideal.It was observed that the contents of essential trace elements Cu,Zn,Cr,Co,Ni,Mn,and Li were higher.This paper provides a scientific basis for evaluating thequality of Momordica charantia.
