摘要
钙是最常见的营养元素之一,但最近的研究发现钙除了最基本的生理功能之外,还有改善肉质的作用,本文就钙改善肉质的研究进展及作用机理作一概述。
Calcium is a familiar element. In recently resarch they found that calcium have some effect on pork quality, it was different from basal physiological function, The progress of research and it is mechanism are reviewed.
