青蛤的营养成分分析与评价 被引量:25

摘要 测定了61、2月份青蛤(Cyclina sinensis)的营养成份,并对其营养价值进行综合评定。结果表明,6月份青蛤的营养较12月份好,其粗蛋白比12月的高出2.84%,粗脂肪含量高出1.74%;6月和12月的氨基酸总含量分别为826.3 mg/g蛋白质和804.0 mg/g蛋白质,其中必需氨基酸分别占36.1%和33.6%,氨基酸计分(AAS)和化学评分(CS)是6月的较高,必需氨基酸指数(EAAI)则分别为64.23和59.88。其不饱和脂肪酸占脂质总量的67.7%,其中单烯酸占24.9%,多烯酸占42.8%,“脑黄金”DHA和EPA的含量分别达到11.3%和18.4%。还含有多种微量元素和维生素。 The nutritional composition of Cyclina sinensis in June and December were determined, and its nutritional quality was also synthetically evaluated. The results showed that the nutrition in June was better than in December, its crude protein content was 2.84% higher,and crude fat content was 1.74% higher; the content of total amino acids was 826.3 mg/g protein and 804.0 mg/g protein in June and Dec., in which the rate of essential amino acids was 36.1% and 33.6% ,the AAS and CS in June was better than in December,the EAAI was 64.23 in June and 59.88 in December. Its unsaturated fatty acid rate of total fat gross was 67.7%, in which the rate of Mono-unsaturated fatty acid was 24.9% and the rate of Poly-unsaturated fatty acid was 42.8% ,the rate of DHA and EPA was 11.3% and 18.4% .There were more kinds of mineral and Vitamin in the muscles of this clam.
