摘要
目的测定三籽两型豆Amphicarpaea edgeworthii Benth氨基酸的含量。方法用氨基酸自动分析仪测定三籽两型豆水解后的氨基酸。结果共测出18种氨基酸,氨基酸总量为21.49mg/100mg,含量最高的为谷氨酸3.80mg/100 mg,有7种人体必需氨基酸,占氨基酸总量的35%。结论三籽两型豆有很高的药用价值和保健功能,开发前景广阔。
Objective To determine the content of amino acids in Amphicarpaea edgeworthii Benth. Methods The amino acids coming from the hydrolyzed A. edgeworthii Benth. were determined by automatic amino acid analyzer. Results 18 kinds of amino acids were contained in A. edgeworthii Benth. Total amino acids were 21.49 mg/100mg, including glutamic acid which was the highest （3.80 mg/100mg）, and seven kinds of essential amino acids which occupied 35% of total amino acids. Conclusion A. edgeworthii Benth. has considerable nutritive value and health effect, so the market prospect will be vast.
