摘要
以甘草、胖大海、菠萝和乌龙茶为原料,研制出一种清咽利嗓复合保健茶饮料。针对其配方、生产工艺和关键技术进行了探讨。结果表明,产品最佳配方为:茶叶4g/L、中草药5g/L、菠萝汁70g/L、蔗糖45g/L;茶叶最佳萃取工艺为:温度80℃,间7min,茶水比1︰80,萃取次数1次;利用壳聚糖澄清菠萝汁最佳工艺为:在40℃、pH值为3的条件下,以0.6g/L用量间歇搅拌1h后离心过滤。
The licorice, the boat-fruited sterculia, the pineapple and the oolong tea was used as main raw material, a kind of compounded healty tea beverage which had brown yellow, best flavor and taste in compounded pineapple and tea was development. The formula, processing technique and key procedure has mainly discussed. The resulty showed that the best extracting method of tea is :80℃ , 7min, the proportion of tea to water 1:80 and extraction for only once. The best clarification technology of pineapple juice using chitosan is the amount of 0.6g/L, 40℃, pH3, and filtering after stirring for 1hour. The best formula of product is: 4g/L of tea, 5g/L of Chinese medicine, 70g/L of pineapple juice and 46g/L of sucrose.
