摘要
关于蒸馏酒在中国的源起,至今尚无共识。学者根据自己掌握的史料,曾先后提出过元代说、宋代(含金代)说、唐代说、东汉说。究竟哪一种看法更接近客观的史实呢?该文对上述各种观点的主要根据,进行了认真的考辨和分析,认为根据目前的文献研究和出土文物的佐证,元代已生产蒸馏酒的论断较有说服力,但是这并不排除在元代以前,中国部分地区的少数人,特别是制药者已掌握运用蒸馏技术来制取蒸馏酒,而这种蒸馏酒只是少量制备,没有形成社会性的规模生产。
UP to now,there has been no common understanding with regard to the origin of distilled liquor in China. Based on the historical materials at their command, scholars have advanced the Yuan Dynasty theory, the Song Dynasty (including the Jin Dynasty) theory,the Tang Dynasty theory and the Eastern Han Dynasty theory.Among the different views,which one is really nearer to the objective facts? After a thorough discrimination of the main grounds for the above opinions,this paper deems that the opinion of distilled liquor being aready produced in the Yuan Dynasty is quite convincing, for it is formed on the basis of present documentary research and evidences of unearthed cultural relics, but this does not exclude that fact that before the Yuan Dynasty, a small number of people in some regions of China, especially pharmaceutists, had known how to distill liquor, although such liquor was only prepared in small quantities and its social mass production had not yet taken shape.
