摘要
研究了茶叶中重金属污染物铅在冲泡中的浸出规律,并根据其浸出情况进行了危害性分析。结果表明,茶叶中的铅在各种冲泡条件下浸出率为5%~50%,在80℃、1∶50、5min的常规冲泡条件下,铅浸出率为20%左右。茶叶中铅浸出率与冲泡温度和冲泡时间均呈正相关关系,与冲泡茶水比呈负相关关系。
Solublization of lead from tea during its brewing process and its risk analysis have been studied according to extractive status of lead. The results showed that the extractive rate of lead from tea is 5%~50% and is 20% in usual brewing condition (80℃?1∶50?5min). The extractive rate of lead from tea is interrelated with brewing temperature and brewing time, negatively interrelated with proportion of tea to water ratio.
