摘要
屠宰经过(13±1)个月育肥、(28±1)月龄的BMY阉公牛15头、云南黄牛9头(母牛4头,阉公牛5头)、短云杂牛阉公牛6头、西云杂牛阉公牛4头,取7~9胸肋眼肉进行粗蛋白、氨基酸含量测定。结果显示,品种、性别间粗蛋白含量无显著差异(P﹥0.05)。云南黄牛肉甘氨酸显著高于(P<0.05)BMY,短云杂牛,云南黄牛肉脯氨酸显著高于(P<0.05)BMY,极显著高于(P<0.01)短云杂牛,云南黄牛肉的蛋氨酸、异亮氨酸、组氨酸显著低于(P<0.05)西云杂牛。短云杂牛肉风味氨基酸、必需氨基酸显著低于(P<0.05)西云杂牛。云南黄牛肉必需/总氨基酸显著低于BMY牛、西云杂牛。阉公牛肉的甘氨酸、脯氨酸显著低于(P<0.05)母牛。
Slaughtering had been fattened for(13±1) months 15 BMY feedlot steers,9 Yunnan cattle(YN,4 females and 5 feedlot steers),6 Shorthorn×Yunnan cattle(SHY) feedlot steers,4Simmental×Yunnan cattle(SIY) feedlot steers which they were(28±1)months old.The Ribeye samples were collected and sealed in clean fresh frozen bag.Crude protein and amino acid content of beef were determined.There were no significant differences(P>0.05) for crude protein content of beef from the female cattle and the steers.There was no significant difference(P>0.05) of crude protein contents of beef among the BMY steers,YN steers,SHY steers and SIY steers.The content of glycine of beef from the YN steers was significantly higher(P <0.05) than those from the BMY steers and SHY steers.The content of roline of beef from the YN steers was significantly higher than those from the BMY steers(P<0.05) and SHY steers(P<0.01).The contents of methionine,isoleucine,histidine of beef from the YN steers were significantly lower(P <0.05) than those from the SIY steers.The content of flavor amino acids and EAA of beef from the SHY steers were significantly lower(P <0.05) than those from the SIY steers.The contents of EAA/TAA of beef from the YN steers were significantly lower(P <0.05) than those from the BMY steers and SIY steers.The contents of glycine and proline of beef from the steers were significantly lower(P <0.05) than those from the female cattles.
