摘要
乳品供应链安全目标体系是评价整条乳品供应链安全度的基础,其中的具体指标体系是核心部分.系统分析了供应链不同环节对乳品质量安全影响的关键因素,统计了近些年来我国发布的相关政策规范,提出了乳品供应链安全目标体系,将整个乳品供应链的安全目标自顶向下划分为三个层次,即总体目标,供应链各成员目标和操作环节具体目标.具体目标均以相关政策规范为标准,以此衡量操作环节的安全性.该体系对于乳品供应链质量安全评价和管理具有直接可操作性指导意义.
The security objective system of a dairy supply chain is the foundation of managing the entire dairy supply chain.The establishment of a specific indicator system is an important part of the security objective system of the dairy supply chain.The key factors of impacting quality and safety in different segments of the dairy supply chain are systematically analyzed.According to related policies and regulations issued in recent years,a security objective system of the dairy supply is putted forward.It is divided into three levels such as the overall objective,the members goals of the supply chain and the specific indicators.The specific indicators based on the relevant policies and regulations can be directly used to measure the safety degree of operating links.The objective system what is constructed is guiding significance for the quality management and safety evaluation of a dairy supply chain.
