摘要
在冰淇淋基本配方的基础上加入菊花金银花提取液 ,分别制得菊花冰淇淋、金银花冰淇淋、复合菊花、金银花冰淇淋 ,具有清凉解暑的功能 ,是一种新型保健冰淇淋。其复合冰淇淋配方 (% )为 :全脂奶粉 7,白砂糖 1 3,麦淇淋 1 0 ,糯米粉 3,明胶 0 .3,CMC0 .2 ,分子蒸馏单甘酯0 .1 ,蔗糖酯 0 .0 5 ,菊花提取液 1 5 ,金银花提取液
The study experimented on the formulary design of Chrysanthemum and Honeysuckle ice cream,which is healthy ice cream.The formulary components (%) are:dried milk 7,sugar 13,margarine 10,glutinous rice flour 3,gelatin powder 0.3, CMC 0.2,mono-diglycerides 0.1,sugar ester 0.05,Chrysanthemum extractives 15 and Honeysuckle extractives 5.
