摘要
吉士粉是一种常被应用于糕点中,给糕点食品增香增色,丰富糕点品种的复配食品添加剂。传统吉士粉由合成色素及其他种类的食品添加剂和配料复配而成,但按我国《食品添加剂使用卫生标准》(GB2760-2007)的规定合成色素的应用范围受到限制。尽管合成色素的很多品种是我国批准使用的,只要按国标使用是安全的,但天然色素以其"天然、营养、多功能"的特点,更符合了现代消费者崇尚天然的消费心理,因此开发含有天然色素的新型吉士粉具有重要意义。然而由于传统吉士粉已在中国应用多年,新型吉士粉产品要替代传统吉士粉产品,必须在产品颜色、口味、性能及应用等方面都优于传统吉士粉产品。为了推动新型吉士粉在糕点食品中的应用,本文对新型吉士粉的研究及产品特点进行了详细介绍。
Custard powder is a kind of Complexedfood additive that is often used in pastries to enhance the flavoure and color and enrich pastries variety.Traditional custard powder mixtures from synthetic pigments,which made it to be one of the important source of synthetic pigment in pastry.With the deveplopment of society and the growth of food safty requirements,the scope of application of synthetic pigments are strictly limited acordding to China's Hygienic Standards for Uses of Food Additives(GB2760-2007).Although many synthetic pigments are allowed to use in our country,and are safe when used according to GB,but natural pigments for their'natural,nutritional,multi-functional'features are more in line with the mordorm people's consumption psychology that advocating the nature,so the development of custard powder contains the natural pigments is of great significance.However,since traditional custard powder has been used in China for many years,natural custard powder wants to replace traditional custard powder must be superior in color,taste,properties and applications.In this article,the research and product characteristics of natural custard powder are introduced in detail to extent its application in pastry food.
