摘要
研究了新疆伽师瓜在贮藏期间经不同浓度臭氧处理后的品质变化。试验结果表明,臭氧浓度为200mg·m-3能有效地减缓伽师瓜含酸量的下降速率和还原糖含量的变化,较好地保持VC含量,贮藏80天时,腐烂指数仅为0.17。
The effects of different concentrations of ozone on the storage quality of xinjiang jiashi muskmelon were studied. The results showed that, the treatment with 200 mg·m -3 ozone could remarkably degrade the changes of acid content and reduce sugar content, preferably reserve VC. The rotten index was only 0.17 after 80 days storage.
