基于危害分析和关键控制点体系的农贸市场快速检测工作质量控制研究 被引量:1

摘要 食品快速检测技术具有快速高效、操作简单、检测成本低等特点,普遍用于基层监管.目前全国多家农贸市场通过建立食品安全快速检测实验室,增强了对流通环节中农产品的质量安全隐患的发现能力.但农贸市场快速检测实验室运行过程中面临检测结果准确性差、检测人员专业技术薄弱、管理水平低等问题.本文通过对农贸市场快速检测工作中各环节的梳理,分析各环节的潜在危害,确定了市场抽样、样品制备、样品检测为3个关键控制点,并制定每个关键点的有效控制措施.将危害分析和关键控制点体系引入对农贸市场快速检测工作的质量控制,以期提高快速检测结果的准确性,促使农贸市场快速检测行业的良性健康发展. Food rapid detection technology has the characteristics of fast and efficient,simple operation,low detection cost,and is widely used in grassroots supervision.At present,a number of farmers'markets in the country have enhanced their ability to discover hidden dangers in the quality and safety of agricultural products in circulation by establishing rapid testing laboratories for food safety.However,the rapid testing laboratory of farmers'market is faced with the problems of poor accuracy of testing results,weak professional skills of testing personnel and low management level.In this paper,by combing through all links in the rapid detection work of farmers'markets,the potential hazards of each link were analyzed,and 3 key control points were identified as market sampling,sample preparation and sample detection,and effective control measures were formulated for each key point.The hazard analysis and critical control point system was introduced into the quality control of the rapid detection work in the farmers'market,in order to improve the accuracy of the rapid detection results and promote the healthy development of the rapid detection industry in the farmers'market.
