3种不同加工工艺汉麻仁油营养组分研究

Nutrition Components of Hemp Seed Oil by Different Processing Technology

摘要 对水酶法、压榨法以及浸提法制得的汉麻仁油的脂肪酸组成、甘油三酯组成、生育酚和生育三烯酚、角鲨烯以及多酚含量进行了分析研究.汉麻仁油中共分析出10种脂肪酸,其中主要脂肪酸为亚油酸(56.37% ~56.52%)、亚麻酸(19.03% ~20.32%)以及油酸(12.38% ~ 13.03%);汉麻仁油中甘油三酯含量最高的为LLnLn,占19.86% ~ 20.96%,其次为LLLn(19.39%~19.72%)、PLLn(12.41%~12.87%)和LLL+ OLLn(10.27% ~10.82%);维生素E组成为α-生育酚、γ-生育酚和δ-生育酚,其中γ-生育酚含量最高,为754.21 ~1 043.80 mg/kg;汉麻仁油中角鲨烯含量介于174.32 ~204.54 mg/kg.水酶法制得的汉麻仁油中多酚含量最高(53.86 mg GAE/kg). Fatty acid composition,triglyceride profile and the content of tocopherol,squalene and polyphenols in hemp seed oil got by aqueous enzymatic,pressing and solvent extraction method were studied.More than ten kinds of fatty acids were analyzed in hemp seed oil,and the main fatty acids were linoleic acid(56.37%?56.52%),lin-olenic acid(19.03%?20.32%)and oleic acid(12.38%?13_03%).Triglycerides of hemp seed oil had the highest amount of LLnLn accounting for 19,86%?20,96%,followed by LLLn(19.39%?19.72%),PLLn(12.41%?12.87%)and LLL+OLLn(10.27%~10.82%).Tocopherol in hemp seed oil included α-,γ-and δ-type,and the content of-γ-tocopherol was the highest level as 754.21?1043.80 mg/kg.The content of squa-lene was 174.32-204.54 mg/kg.Polyphenols were found in highest concentrations(53.86 GAE mg/kg)in hemp seed oil obtained from aqueous enzymatic method.
