植物油体的组成、结构及在食品工业中的应用

Composition and structure of plant oil bodies and its application in the food industry

摘要 油体是植物储藏脂质的球形细胞器,其内部的液态基质为甘油三酯,表面被单层磷脂-内源性蛋白质组成的生物膜所覆盖,这种特殊的组成及结构使植物油体有望成为食品工业中天然稳定的加工原料。根据植物油体的组成、结构及其特性,阐述了植物油体在食品工业中的应用前景,包括天然乳液的形成及应用、构建稳定的乳液体系、重构油体递送脂溶性生物活性物质、优化提油工艺及其他应用,以期为植物油体的进一步研究提供参考。 The plant oil body is a spherical organelle for storing lipids in plants. Its interior base is triacylglycerol and its surface is covered by biomembrane,which is composed of monolayer phospholipid and endogenous proteins. This special composition and structure enables plant oil body to be hopeful to become natural and stable processing raw materials in food industry. Based on the composition and structure of plant oil bodies,the application prospects of plant oil bodies in the food industry is expounded,including in formation and application of natural emulsion,building stable emulsion system,restructuring oil bodies to delivery lipophilic bioactive compounds,optimizing oil extract process and other applications,so as to provide reference for further research on plant oil bodies.
