摘要
发酵被认为是简单且经济的开发谷物饮料的技术方法之一.开菲尔粒是一种复杂的益生菌载体,其中含有丰富的益生菌、胞外多糖和蛋白质复合体.开菲尔粒可适应不同的原料基质,因此,可生产新型功能性谷物发酵饮料.本文首先概述了开菲尔谷物发酵饮料目前取得成果和技术发展,以及在促健康特性和食品工业中的潜在应用;然后介绍了该饮料在调节肠道菌群、抗癌、抗氧化、降压和治疗糖尿病等方面的功能.最后讨论了开菲尔谷物产品的开发趋势,为开菲尔谷物发酵饮料产业的研究与发展提供参考.
Fermentation is considered to be one of the simple and economical technical methods for the development of cereal beverages.Kefir grains are a complex carrier of probiotics,which are rich in probiotics,extracellular polysaccharides and protein complexes.Kefir grains can be adapted to different raw material substrates,so new functional cereal fermented beverages can be produced.This paper first summarizes the current achievements and technological development of Kefir cereal fermented beverages,as well as their potential applications in health promotion and food industry.Then the functions of the beverage in regulating intestinal flora,anti-cancer,anti-oxidation,antihypertensive and diabetes treatment were introduced.Finally,the development trend of Kefir grain products was discussed,which provided reference for the research and development of Kefir grain fermented beverage industry.
