摘要
作为食品加工的废料,每年有大量的菠萝冠叶被丢弃,这造成了严重的资源浪费和环境污染。而菠萝冠叶中富含抗氧化功效的黄酮类和酚类等化合物,具有非常优良的抗氧化、降血脂和抗炎抑菌等功效。因此,开展菠萝冠叶的提取研究将有助于提高菠萝冠叶的利用率和产品附加值。以菠萝冠叶为原料,以水和乙醇为溶剂,通过超声波辅助提取法对菠萝冠叶进行了提取研究,并对水提取物和乙醇提取物的抗氧化性能进行了考察,具体包括对Fe3+的还原能力、二苯基苦基肼自由基(DPPH·)与羟基自由基(·OH)的清除效果。结果表明:菠萝冠叶提取物具有良好的抗氧化性能,对DPPH·和·OH都具有较高的清除效果;此外,该菠萝冠叶提取物还可以成功应用到素颜霜产品中,并具有良好的稳定性能。
As the waste of food processing,a large number of pineapple leaves are discarded every year,resulting in the serious waste of resources and environmental pollution.However,the pineapple leaves are rich in flavonoids and phenols,which have excellent antioxidant,hypolipidemic,anti-inflammatory and bacteriostatic effects.Hence,the research on the extraction of pineapple leaves would be conducive to improve their utilization and product values.In this paper,pineapple leaves were extracted by ultrasonic assisted extraction method with water and ethanol as solvent,and the antioxidant properties of the water extracts and ethanol extracts were investigated,including the reduction ability of Fe3+,the scavenging effect of DPPH·and·OH.The results showed that the extracts of pineapple leaves had good antioxidant properties and high scavenging effect on DPPH·and·OH.In addition,the extracts of pineapple leaves were also successfully applied into the gloss cream product with good stability.
