摘要
目的调查浙江省居民公筷使用现状,分析公筷使用的推广影响因素,为相关部门决策提供参考。方法参考健康信念等理论设计问卷,通过分层比例抽样选取杭州市、绍兴市、台州市、衢州市4个浙江省经济发展具有代表性的城市开展问卷调查,采用二元Logistic回归、多元Logistic回归等模型分析浙江省居民公筷使用的推广影响因素。结果二元Logistic回归分析显示,户籍、年龄、感知行为障碍、感知风险性对公筷使用行为存在显著影响。在公筷推广影响因素多元逻辑回归分析中,以“社会公筷宣传倡导”为参照,男性相较于女性更不愿因避免交叉感染(OR=0.466,95%CI:0.262~0.827)和基于良好的就餐习惯而使用公筷(0R=0.497,95%CI:0.263~0.938);感知易用性越高的居民更愿因避免交叉感染(OR=1.349,95%CI:1.071~1.701)和基于良好就餐习惯而使用公筷(OR=1.394,95%CI:1.081~1.798);城市居民相较于农村居民更不愿因家庭权威人物的要求而使用公筷(OR=0.161,95%CI:0.042~0.621);感知易用性越高的居民更因体现就餐文明而使用公筷(OR=1.354,95%CI:1.016~1.803)。通过家人朋友与手机渠道获得公筷知识宣传效果较好。结论建议开展持续、双向互动、生动易懂的社会倡导宣传,发挥家庭权威人物的引导带动作用,推进餐饮行业主动按要求提供公筷,以促使公筷使用率的提高。
Objective To investigate the present situation and the promoting factors of the use of serving chopsticks in Zhejiang province and provide policy reference for relevant departments.Methods The questionnaire was designed-based on Health Belief Theory,and 4 representative cities of economic development in Zhejiang province(Hangzhou,Shaoxing,Taizhou and Quzhou)were selected by stratified proportional sampling to carry out the survey.Binary logistic regression and multiple logistic regression models were used to analyze the promotion factors of serving chopsticks usage.Results Household registration,age,perceived behavioral disorder and perceived risk had significant effects on the use of serving chopsticks.Compared with the reason of"social propaganda and advocacy",men were less likely than woman to use serving chopsticks to avoid cross infection(OR=0.466,95%CI:0.262-0.827)and based on good eating habits(OR=0.497,95%CI:0.263-0.938).Residents with higher perceived ease of use were more likely to use serving chopsticks to avoid cross infection(OR=1.349,95%CI:1.071-1.701)and based on good eating habits(OR=1.394,95%CI:1.081-1.798).Urban residents were less likely to use serving chopsticks at the request of family authorities(OR=0.161,95%CI:0.042-0.621).Residents with higher perceived ease of use were more likely to use serving chopsticks to reflect the dining culture(OR=1.354,95%CI:1.016-1.803).It was better to promote the use of serving chopsticks through family,friends and mobile channels.Conclusion It was recommended tocarry out continuous,two-way interactive,vivid and understandable social advocacy,play the leading role of family authorityfigures and promote the catering industry to actively provide serving chopsticks,so as to promote the use of serving chopsticks.
