猴头菇的历史文化溯源与食疗文化 被引量:12

摘要 猴头菇是我国传统的名贵菜肴,但远远望去猴头菇的外形神似金丝猴的头,所以被人们称为"猴头菇"。根据调查,猴头菇这种名贵的食用菌不仅具有很好的食用功效,同时也有极高的营养价值。我国最早有关于猴头菇的记载是在《农政全书》中,只是寥寥几笔。改革开放之后,人们对于猴头菇的研究不断增多,逐渐发现了食用猴头菇能够给身体带来益处。再加上科学技术的不断发展,人们也对猴头菇进行了人工培养和变异繁殖,大大增加了猴头菇的产量。因此,猴头菇逐渐走进了平常百姓的饭桌上。通过探讨猴头菇的历史文化和食疗文化,希望能够为我国猴头菇的研究发展做出贡献。 Hericium erinaceus is a traditional rare dish in China.Seen from a distance,it looks like the head of a golden monkey,so it is called H.erinaceus.According to the investigation,H.erinaceus,as a rare edible fungi,not only has good edible effect,but also has extremely high nutritional value.The earliest records of H.erinaceus in our country are in The Complete Book of Agriculture,which is only a little.However,after the reform and opening up,people’s research on H.erinaceus has been increasing and gradually discovered the benefits that eating H.erinaceus can bring to the body.Coupled with the continuous development of science and technology,people have also carried out artificial cultivation and mutation propagation of H.erinaceus,greatly increasing the yield of H.erinaceus.Therefore,H.erinaceus has gradually entered the table of ordinary people.the historical culture and diet herapy culture of H.erinaceus were discussed,hoping that can contribute to the research and development of H.erinaceus in China.
